Morphology

Black in colour, indicative of optimal ripeness. It has a rough texture on the outside and a branched texture on the inside.

Organoleptic characteristics

The flavour is slightly bitter and very distinctive.
Very intense, spicy aroma.

Culinary uses

Widely used in the catering industry for seasoning and plating.
